Snack: Goji Berry Raisin Flaxseed Muffins
Flaxseed muffins are my favorite snack right now. They deliver whole grain and essential fatty acids all in a yummy muffin. They aren’t as dessert-like tasting as cupcakes or blueberry muffins. But they are perfect for between meals or on the go because they really fill you up and keep you going for a few hours with the complex carbohydrates. This time I used the goji berries and raisins. They were great. I have also used many other ingredients in the past, such as apples, carrots and bananas. You can be creative!
