White Whole Wheat Buttermilk & Berry Pancakes


Unfortunately the only photo we took of the pancakes is this one which seems like it is making a funny face. But seriously, these pancakes were so delicious!! And definitely good for you as well. I made them when my sister Lindsay and her boyfriend were visiting us over the holiday. They loved them. I will be making these again tomorrow morning!

This recipe originated from the cooking light website, but I changed it by using white whole wheat flour and by adding berries to it.

White Whole Wheat Buttermilk & Berry Pancakes Recipe:

1 cup white whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 large egg, lightly beaten
1 cup buttermilk
2 tablespoons dark honey
1 cup or so of any berries (I used mixed berries which included raspberries, blackberries, blueberries & strawberries)

Mix the first 4 ingredients. Then add the egg, buttermilk and honey, mix it all well. Then cook on the stove. I have non stick pans, so I cook on low-med heat. You just pour some batter into the shape of your pancake and then add a few berries on top. The berries will only show up on one side of the pancake. They will taste great! We like to use land o lakes butter and a fake maple syrup made with splenda. One day, I would like to try real maple syrup. Until then, I enjoy how light the fake syrup is since it doesn't make me get that sick feeling I get when I have eaten too much honey!
